- 2 Cup Mashed Potatoes
- 1⁄2 Cup Spinach, Chopped
- 1⁄2 Cup Swiss Cheese, Shredded
- 1⁄4 Tsp. Salt
- 1/8 Tsp. Pepper
- 1 Tsp. Onion Powder
- 4 Eggs
- Soften cream cheese & add to mashed potatoes.
- Combine ham, cheese, spinach & seasonings to mashed potatoes. Slightly cool.
- Add eggs & mix. Grease muffin pans. Scoop mixture into pan filling it to rim.
- Bake in 350° oven for 8-10 minutes or until puffed & golden brown.
